Let's Try: Root Beer Float Pie!



     Every year I like to bring pies to work for Pi Day. I also like to vary the type of pies I bring so each year I browse different recipe books looking for something new. This year I discovered Out of the Box Desserts: Simply Spectacular Semi-homemade Sweets which contains an unusual-sounding recipe for a root beer float pie. My curiosity was piqued so I decided to try it.

     The recipe is simple and no-bake. The main ingredients are high-quality root beer, vanilla pudding mix, milk, and Cool Whip. Once the mixture is completed and in the pie crust, it just needs to freeze overnight. My co-workers loved it!

     The rest of the book is filled with easy and often creative recipes for cakes, pies, cookies, and cheesecakes that start with a box of cake mix or pudding mix. The author, Hayley Parker, recently came out with a second book called Out of the Box Holiday Baking which has similarly-styled recipes with holiday touches such as Peppermint Cupcakes and Eggnog Pie.
