Many nutrition experts advocate incorporating healthy salads into your day-to-day diet, but it's easy to get bored of plain lettuce with low-fat ranch dressing. Luckily, editor, author and teacher Mindy Fox packs a lot of punch into her new cookbook Salads: Beyond the Bowl. Certain to liven up any salad plate, this beautifully photographed book includes 100 recipes offering a non-traditional take on a common menu item.
The book opens with the author explaining her seven secrets to an extraordinary salad. Rule number one is to source ingredients "impeccably," as she says, choosing fresh, locally grown produce from farmer's markets, even if it means having to make changes to one of her recipes! She also advocates thinking "beyond greens" and using things like fruits, grains, beans, nuts, eggs, cheeese and more to craft tasty salads.
Although all of the recipes in the book look delicious, some of the standouts include "Fresh Figs, Shaved Celery and Prosciutto," "Arugula, Golden Cherries, Marcona Almonds, and Parmigiano-Reggiano" and "Black Bean Salad with Shrimp and Pickled Onions." Recipes in the book can appeal to people with all different kinds of diets, from vegan, to vegetarian to omnivores.
