As fall marches on towards winter, it's time to think about the good, hearty recipes that will get you and your family through the cold months ahead. In Portland, Oregon-based author Diane Morgan's new cookbook, Roots , discover more than 225 delicious recipes all featuring one common ingredient: a root vegetable!
This beautifully photographed and extensive collection is divided up into sections with recipes focusing on a specific root vegetable. You'll find common grocery store selections like beets, carrots, parsnips, potatoes, and turnips, but also more exotic roots like arrowhead, Jerusalem artichokes and even wasabi! Be sure to visit your local farmers' market for seasonal ingredients!
Some standout recipes include "Cream of Celery Root Soup," "Brown Sugar-Ginger Ice Cream," "Shrimp and Jicama Ceviche" and "Twice-Baked Gruyere Potatoes with Lots of Green Onions." Be sure to check out your own copy of this book, however, because the list of standout recipes could go on for pages!
